The French connection. The end of the process line is where the meat is packaged and boxed for shipping. The Israel Ostrich Company, located in the Negev region of Israel is the world's largest Ostrich farm and supplier of meat has about 16,000 Ostrich. The process begins with breeder birds, icubation of the eggs, raising the birds. The birds are raised until they reach one year of age and then are slaughtered for their meat and skins.
